Today’s recipe is for… portabella burgers! I do enjoy a good beef burger, but sometimes it’s good to change things up a little.
Starting with a couple portabella caps, remove any stems and discard, and set aside the mushrooms.
We’re going to want to marinate them, so in a bowl, combine equal parts olive oil and balsamic vinegar. Using this as your base, you can then add a variety of different seasonings. I added salt, pepper, oregano, Worcestershire sauce, and some chopped garlic, but you could use soy sauce, any fresh herbs, or even a salad dressing.
Place the mushroom caps in a shallow dish and cover with the marinade. Make sure the gill side is facing up, so the liquid can really get in there and soak. Let them sit for at least 15 minutes, longer if you can wait.
When you’re ready to cook them, preheat the grill and plop them on for about five minutes per side. You can also pan fry them, or bake in an oven at 350 F for about 10 minutes.
C didn’t really help me much (mostly just by staying out from underfoot), so this is really just a blatant attempt to put his picture here since he’s so cute.
