What goes better with yogurt than granola? (Rhetorical question – I’m sure you could come up with better answers, but that would ruin the intent of this post, so granola it is!)
Yeah, I also made some granola last week to go with the yogurt. It turned out pretty well – it won’t end up as chunky as what you buy in a store (I think you need to bake it longer in one sheet, then break it up), but then, what do you make at home that is anything like store-bought? The recipe is just a baseline – none of the measurements need to be exact (I didn’t use any measuring cups when making this), and you can substitute any number of add-ins to suit your taste.
Homemade Granola
- 4 cups old-fashioned oats
- 1/2 cup honey or maple syrup (or a combo of both, or a thick syrup made from brown sugar, or really, whatever sweetener you want)
- 1/3 cup oil
- 1 Tbsp vanilla
- 1/2 tsp salt
- 1/2 cups chopped walnuts (or almonds, pecans, nothing, etc.)
- 1 cup dried fruit (I used cranberries and blueberries)
Again, this is a bare-bones recipe, you can add or subtract just about anything. Maybe a vanilla macadamia? Dried raspberries and dark chocolate chunks?
I also pulverized 1/4 cup of oats in the blender – this is supposed to help it “chunk” but I didn’t really notice much difference.
Combine the oats and salt in a large bowl, then mix in all the liquids, stirring well to make sure everything is covered. Spread on a baking sheet and bake for about 25 minutes at 300 F. Remove from the oven and put the mix back into the bowl. Add the fruits and nuts, and stir again (I did this step so the fruit wouldn’t get too dried out – maybe it’s unnecessary). Place back on the baking sheet and in the oven for another 15 minutes.
Let it cool, and store it in jars. I don’t know how long it keeps because it didn’t last long.
I had yogurt and granola for breakfast every day last week, and it kept me full longer into the morning than the usual bowl of cereal does . Not as long as bacon and eggs would, but not bad, nonetheless.
